Sweet Potato {Chorizo} Hash

Last night was exhausting. It was our first attempt at having Aiden sleep in his crib. Prior to this he had been sleeping in the bassinet in our room. I’m assuming it was the unfamiliar environment, which is weird because he has taken about a dozen naps in the crib already. We patiently laid in our bed, starring at the ceiling, and listening to his cries for a very very long time. And not just soft little cries that fade out once in awhile due to being over tired. No. These were loud full-out screams. I’d walk in the room about every five minutes to stroke his cheek (which usually puts him to sleep instantly) and he would become silent the second he saw me walk in. But the second he knew I left the room- screaming. This went on for a long time before I finally gave up and brought him back into our room.

Needles to say we woke up sleep deprived and exhausted. And I missed breakfast again. So I’m going to share another
breakfast recipe so I can dream about what I wish I could have eaten. Sweet Potato Chorizo Hash. We actually made this on Saturday and it took all of our will power to refrain from devouring it so we could take some pictures. AJ actually did all the photography on Saturday while I did the cooking. So photo credit goes to him. He’s pretty good, right?

We had leftover chorizo on Sunday morning and made omelets. My advice is to buy extra chorizo at the store so you can do the same. I know a lot of people say how chorizo is horribly unhealthy but I might disagree. Yes it is higher in fat, which means higher calories and something that could make weight loss more difficult. Buuuut, I do think it’s perfectly fine if you have it in moderation. As with anything.

Anyway, this dish is so simple, so delicious, and so full of flavor. I made the recipe to be enough for 2-3 people, but if you have a big appetite and more people to feed, this is definitely a good recipe to use- just double (or triple) it up! Also, you may notice how the sweet potatoes look white in the pictures. Thats because they are white sweet potatoes! I am so excited because we bought a variety of different colored sweet potatoes on our last trip to the store. Even purple! I seriously can’t wait to use them in a recipe. I imagine something beautiful. Any requests?

  1. Mothers: how did you make the transition from bassinet to crib? I need some tricks.
  2. If you could make ANY kind of breakfast hash, what would be in it?
  3. Give me some creative ideas for dishes with purple sweet potatoes. Can be soups, main dishes, sweet, savory, desserts, anything!

Sweet Potato Chorizo Hash

Print Recipe
Serves: 2-3 Cooking Time: 30-45 min

Ingredients

  • 1 large white sweet potato, peeled and cubed (about 2.5 C total)
  • 2 Tbsp olive oil
  • 1/4 lb chorizo
  • 1/2 C finely chopped yellow onion
  • 1/2 C finely chopped mushrooms
  • 1 green onions, chopped
  • 3 eggs
  • Avocado
  • Pinch of salt (optional)
  • Pepper (optional)

Instructions

In a small pan, saute the onions and mushrooms over medium heat until slightly browned. Set aside.

In a separate medium pan, add the oil and sweet potatoes and cook over medium heat until the potatoes are slightly browned and slightly crispy. Turn the heat down to low.

Add the mushrooms and onions to the potatoes. In the now free small pan, brown the chorizo until fully cooked. Add to the potatoes.

Stir in the green onions to taste.

Make three small wells in your hash and crack an egg into each. For more even cooking, cover the pan with a lid. Cook until the whites are set and to your liking.

Season with salt and pepper, and top with avocado. Ok, now you can devour.

    The only thing wrong with this meal is that it isn’t in my belly! Can’t wait to make it for breakfast tomorrow. It has been rainy here in SoCal so a warm breakfast is just what the doctor ordered!!
