{Slow Cooker} Cashew Chicken

I am definitely on a heat (as in spicy foods) kick!  We had out first snowfall this week and the temperatures dropped fast. I’ve had my crushed red pepper close by for all my meals. Even breakfast. In my pancakes. Nah- I don’t like heat that much. Anyway, I made a version of this cashew chicken a couple years ago for some friends and it was AMAZING. But of course I didn’t use a recipe…so now I am doing my best to replicate it. The first time I made it, I cooked it over the stove, but this time I chose the slow cooker due to lack of time for fussing in the kitchen. Ever since Aiden was born, the pressure cooker/slow cooker has been one of my favorite things.

Ok, now my gears are turning about spicy pancakes. Or waffles! I’ve been dying for some waffles lately. Spicy syrup with bacon on top! AJ would love that. What do you think? One thing you all must try is hot apple cider with cayenne pepper and cinnamon added! SO delicious. And it will completely clear your sinuses. It’s rare that I enjoy a spicy drink, but I definitely love cider with cayenne.

For now, you will have to make this cashew chicken. The combination of cashews and chicken is just wonderful. Plus, it’s sweetened with a little honey and flavored with spices! Need I say more? Go make it! I’ll figure out those spicy waffles.

To start, add 1.5 lb chicken (cut into pieces), tapioca flour and pepper to a large bowl and toss to coat the chicken thoroughly.

In a separate bowl, mix together the soy sauce (or coconut aminos), vinegar, tomato paste, honey, garlic, and red pepper.

Over medium heat, melt the oil in a large pan and add the chicken. Cook until slightly browned (about 6 minutes). Turn temperature to low and add the sauce mixture to the chicken, cooking for 2 more minutes.

Add to the crockpot and cook on low for 3 hours.

Before serving, add the cashews, salt to taste and scallions (optional) into the chicken. If your cashews are already salted, you may not need any salt, as those are pretty heavily salted already. This is great topped over rice, stuffed in a wrap, or on its own!

Slow Cooker Cashew Chicken

Serves: 2-4 Cooking Time: 3 hours

Ingredients

  • 1.5 lb chicken breasts, cut into one inch pieces
  • 1/4 C tapioca flour
  • 1/4-1/2 tsp black pepper (depending on preference)
  • 1 Tbsp coconut oil or olive oil
  • 2 Tbsp soy sauce or coconut aminos
  • 2 Tbsp rice wine vinegar
  • 2 Tbsp tomato paste
  • 1 Tbsp honey
  • 1 tsp minced garlic
  • 1/4-1/2 tsp red pepper flakes
  • 1/2 cup raw cashews
  • pinch of salt (optional)
  • scallions, chopped for garnishing (optional)

Instructions

In a large bowl, toss the chicken in the tapioca flour and pepper to coat thoroughly.

Add to the crockpot and cook on low for 3 hours. If you'd prefer to cook in the oven, cook at 350º for 20-30 minutes or until the chicken is cooked thoroughly.

Before serving, add the cashews, salt (optional) and scallions (optional) into the chicken. top over rice or cauliflower rice, stuff it in a wrap, or eat by itself!
