The last pumpkin recipe of the year: {Pumpkin} Pecan Cobbler

Im just about pumpkin-ed out. Almost. I had to make this delicious pumpkin pecan cobbler first. I’ll likely finish the whole pan and then officially be pumpkin-ed out. My plan was to use real pumpkin too. But I cheated. I used canned. And so my real pumpkin sits on my counter, soon to be swapped out with Christmas décor (probably tonight).

I tried a recipe similar to this a couple years ago, but I’ve tweaked this one a bit to be healthier. And honestly, I think it’s more delicious. Or maybe that was because I had a scoop of vanilla ice cream on top. Regardless, just try this recipe. Even if you are almost pumpkin-ed out. It’s amazing. You’ll thank me.

And it is super simple, since we all know I am not a fan of complicated cooking. Only 10 ingredients (11 actually, including the water), and you basically just need to throw it all together.

In a medium bowl, throw in the flour, baking powder, salt, and pumpkin spice. Mix. In a separate bowl, stir the pumpkin, milk, coconut oil, 1/2 C honey and vanilla together.

Pour wet ingredients into dry ingredients and mix. The batter will be quite thick. Spoon the batter into the baking dish and smooth evenly across the pan with a spatula.

Lay the pecans evenly onto the batter, pushing them in slightly so they stay put. In a small bowl, stir 1/3 C honey and hot water together. Pour hot water mixture on top the pan and place in the oven. When I first made this, I was quite hesitant on pouring the hot water on top, but trust me! It cooks through the cobbler and creates a caramel layer on the bottom!

Bake for about 35 minutes at 350º.

Honestly, after making this I am so glad I did! I definitely wasn’t as pumpkin-ed out as I thought. It took a bit of will power, but I was able to save some for AJ…

Make sure you have some ice cream when you make this. Ive been on a Halo Top and Arctic Zero kick lately. Unfortunately I was fresh out of those.

{Pumpkin} Pecan Cobbler

Serves: 4 Cooking Time: 35min

Ingredients

  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 Tbsp pumpkin pie spice
  • 1/2 C honey
  • 1/4 cup coconut oil
  • 1 teaspoons vanilla
  • 1/2 cup pumpkin puree
  • 1/4 cup almond milk
  • ----
  • 1/3 C honey
  • 1/2 cup pecan halves
  • 1 1/4 cups very hot water

Instructions

Preheat oven to 350º and grease an 8X8 baking dish.
