Pumpkin {Peanut Butter} Chocolate Chip Muffins

I gotta say, my sweet tooth hasn’t let up yet. I think it has gotten worse. It’s probably the colder weather and holiday goodies I see everywhere. Every time I drive passed Culver’s and see their flavor of the day, I am tempted to get one of their concrete mixers. If I ever do treat myself, I always end up having peanut butter in it. Usually Oreo and peanut butter. However, the seasonal flavor, Pumpkin, has been popping up on the sign much more often, and it got me thinking. I bet peanut butter mixed with pumpkin would be delicious! I asked A what he thought, and he didn’t share the same enthusiasm. So, here I am, proving the flavors go well together in the form of a healthy muffin. I haven’t let into the Culver’s cravings yet.

I chose muffin form because they are great for breakfast, a snack, post workout, pre workout, or dessert.

Instead of flour, I used oats. Instead of sugar, I used honey. I also made half the batch with protein powder to see how they would turn out. They were awesome! Perfect for after my workout!

The creation only made 6 muffins, which was perfect because it is a short week with traveling up north for Thanksgiving. Plus, I knew I would be eating most of them. Making fewer means eating fewer. If you haven’t noticed, I have a problem with self control when it comes to things with chocolate or peanut butter.

I am also going to share my Mom’s Pumpkin Chocolate Chip recipe in the next week or so. There is no way I could top those. My mom is one of the best cooks I know. She gets it from my Grandma, I am sure. I am so lucky to have had their cooking for the past 23 years.

If you have more people to feed in your household, I would definitely recommend doubling, or even tripling, the recipe.

The protein muffins definitely came out with a bit more volume. The ones without were slightly more dense and moist. Both were delicious, and I like having the option depending on the time of day.

I had thought about whipping up some peanut butter topping for the muffins to get a pit more of the peanut butter flavor, but didn’t have time. If you’d like to try it, simply whipping together peanut butter with some greek yogurt does the trick.

I made these two days ago. And today they are gone. I feel it is safe to say that pumpkin and peanut butter DO go well together. I think I will just have to try it in a concrete mixer next time. I don’t really have a choice now.

Pumpkin {Peanut Butter} Chocolate Chip Muffins

Serves: 6 Cooking Time: 15 min

Ingredients

  • 1/3 C pumpkin
  • 1/2 C natural peanut butter
  • 1/4 C honey
  • 1 egg
  • 1 tsp vanilla
  • Pinch of salt
  • 1/2 tsp Pumpkin spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2/3 C Old Fashioned Oats, split in half
  • 1/3 C dark chocolate chips (I use Enjoy Life Chocolate Chips)
  • 1/3 C Vanilla Protein Powder (optional, see note below)

Instructions

Preheat the oven to 350º F and grease a muffin tin with non-stick spray.

With an electric mixer, cream together the mashed up pumpkin, peanut butter, honey, egg and vanilla until combined.

Using a blender or food processor, take 1/3 C of oats and blend until powdered.

Throw in the salt, pumpkin spice, baking soda, baking powder, oat powder and protein powder (optional). Mix.

Stir in the remainder of the oats and chocolate chips.

Scoop the mixture into 6 muffin tins and bake for 15 minutes or until slightly underdone. Don't over cook. They won't be as tasty.

Let cool and devour.

Notes

Protein powder will give more volume to the muffins. Without, they will be slightly more moist and dense. Either way is delish. I usually make half the batch with, and half the batch without.
